Puran Poli

This one is one of my favorites! 😀

It is a traditional Maharashtrian Sweet dish. The sweetness of Puranpoli comes from jaggery (gur) which is an healthy replacement for sugar. Jaggery is high in iron content and helps in keeping the digestive system in a hale and healthy condition.

For making it easier for you the preparation procedure has been divided into two sections.

1) Mixture for the Puran

2) Setting for the Poli

Don’t be worried about the length of the recipe. It is very very easy! Let’s begin!

How to create mixture for puran in Puranpoli?

You will require                                                                    puran-poli-recipe

  • Bengal Gram (Chana Dal) – 1 Cup
  • Jaggery (powdered) – 1 Cup
  • water – 3 Cups
  • Ghee – 2 tbsp
  • Dry ginger powder – 1 tbsp
  • Cardamom powder – 1/2 tssp
  • Nutmeg powder – 1/4 tsp

Preparation of the Puran

In a pressure cooker, cook the Chana Dal for around 6-7 whistles.

Strain the dal well and keep it aside.

Now take a pan and heat the ghee, add to it ginger powder, nutmeg powder and cardamom powder and mix well. To this add the chana dal and jaggery, mix well.

On low flame let the mixture cook.

Stir the mixture occasionally and let the mixture be there on flame till it becomes dry.

Allow it to cool and then smash the mixture.

Ideas: The stock of the dal can be reused while making vegetable curry or for dal fry.

For the Poli

You will need:

  • Wheat flour – 2 cups
  • Ghee – 1 tbsp
  • salt – 1/2 tbsp
  • Water – to knead

Preparation of the Poli

Take wheat flour, salt, ghee and water, mix well.

Prepare a soft and smooth dough like the one which you create for making chappatis.

Cover it and keep it aside for 15-20 minutes.

Now comes the Real Puran Poli making part!

Take a small portion of the dough and roll a small chappati(poli) around 2-4 inches in circumference.

Place the Puran in the middle of the Poli and cover the puran completely with the chapati.

Sprinkle some flour on the puran filled poli ball and roll it again making a medium size chappati of it.

Take a pan. Add some ghee to it and place the pura poli on it. Let it become brown and then turn over, apply a little ghee and again let this side as well to become brown.

Serve Hot!

Tip: You can have the Poli just like that or you can enhance its taste by having it with milk or Kadi! Anyway round it tastes awesome.

Steamed Modak

Again a Maharashtrian Sweet which is both healthy and tasty. I think being born and bought-up in Maharashtra I have a special inclination towards Maharashtrian dishes. During Ganesh Chathurthi we used to have this sweet, but fried one and not the steamed one. And I used to have it a lot! In our childhood who cared for calories?! Now also more than the weight part, I am more obsessed towards being healthy. That is why Healthy Dessert Recipes 😉

Ok so what will you need for making the deliciously healthy Steamed Modaks?

For the filling of the Steamed Modak

Grated Coconut (fresh) – 1 Cup                                                steamed-modak-recipe

Jaggery (grated) – ¾ cup (medium sweet) / 1 cup (for real sweetness)

Cardamom – ½ tbsp

Raisins – 1 tbsp

Cashews – 5-6 (chopped)

Almond – 5-6 (chopped)

Nutmeg powder– a pinch

Poppy Seed – ½ tbsp

Ghee – ½ tbsp

Procedure:

In a pan heat the ghee and then add raisins, cardomom, cashews, almonds, nutmeg powder, poppy seeds and saute for few seconds.

Then add grated coconut mix it well with the other ingredients.

Now add jaggery and mix really well on a low flame.

The jaggery will start melting. Let it cook for few minutes till the jaggery melts completely and gels with other ingredients.

Once the mixture starts to dry get it out of flame and keep it aside.

If your mixture still have too much of moisture content in it, simply sprinkle some rice flour onto the mixture.

For the outer cover of the Modak:

Rice flour – 1 Cup

Water – 1 ¼ Cups

Slat – a pinch

Ghee/ Oil – ¼ teaspoon

Procedure:

Boil water mixed with oil and salt.

When the water starts to boil, lower the flame and gradually add the rice flour. The complete rice flour should get mixed with water.

Take this mixture off the flame and cover it. Let it rest for 4-5 minutes.

Now take the dough and knead it till it becomes soft and even, without cracks when assembled.

Tips:On your palms apply water before you start kneading the dough, as the dough will be hot and water will help in easy kneading.

Take small portions from the dough and make small balls(the size depends on how big you want your modak to be 🙂 ). Make sure that there are no cracks in the balls. Applying water on palms while rolling the balls will help in giving a smooth outer texture to the balls.

After preparing the balls cover them.

Now take water in a pan and let it steam , in the meanwhile take a steamer and apply oil (preferable is ghee) on its surface.

Apply some ghee/oil on your palms and start flattening the balls into a shallow bowl shape.

Take some filling and place it in the center.

Now carefully press the edges (please take a look at the pic to get a clear idea), bring the pressed edges together and join them.

Prepare the rest of the modaks like this and then place them on the steamer and place the steamer inside the pan of boiling water and cover the pan with a lid.

Now allow the modaks to get steamed for around 10 minutes to 15 minutes. And There you go tasty and healthy modaks are ready to treat your tastebuds!

Tip: if you are a ghee lover, then drizzle some ghee on top of the hot steamed modak and serve.
